AMELIA ISLAND, Fla., March 10, 2022 – Omni Amelia Island Resort unveils the lineup for its 2022 Sprouting Project dinner series. Attendees are invited on an epicurean adventure exploring the resort’s onsite chef’s garden and Barrel Room topped off with an elevated five-course dinner under the stars. Unveiled in 2014, The Sprouting Project has become a guest and local favorite. The dinners offer an intimate southern-inspired farm-to-table experience which is the resort culinary team’s answer to hyper-local sustainable dining.
Each dinner is themed by a locally sourced ingredient, which is used throughout the entire evening from light bites through dessert. Guests can learn more about the resort’s sustainable growing practices via a tour of the state-of-the-art aquaponic greenhouse, expansive organic gardens, Barrel Room and large collection of beehives which are used to harvest honey and increase pollination throughout the garden.
“The Sprouting Project Dinner Series has always been a passion project for our team. This year we highlight some unique flavors such as Stone Fruit, Fig, Blooms and Truffle and use them in some truly unexpected ways which will surprise and delight guests,” said Executive Chef Omar Collazo. “We’ve worked so hard over the years to build this sustainable space, and we love sharing this with our guests through these dinners.”
The Sprouting Project dinners’ schedule and themes for this year include:

Tickets for general admission to each dinner are $99 per person, while the special Truffle dinners held in December 2022 will be $149 per person. Each dinner will kick off with cocktails and light bites at 6 p.m. followed by a five-course dinner at 6:30 p.m. A cash bar will be on site and seating is limited.
Private dinners are also available for up to 10 people, starting from $250 per person without beverage pairings, and $350 per person with beverage pairings. Private dinners are based on availability and advanced reservations are required. Guests interested in booking this experience can contact the Concierge for reservations.
The Sprouting Project also provides ingredients to the resort’s nine restaurants and lounges including Florida palmetto honey dripping from the comb and organic Satsuma jam at The Morning Table breakfast buffet in Sunrise Café and fresh basil for pesto at Natural Slice.
The Sprouting Project’s Barrel Room provides an opportunity to age honey varietals, vinegars, hot sauce and cocktails.
